Delicious creamy mild pesto. Family favourite, excellent on pasta, as a dip, sandwiches or with cheese.

This variation on a traditional pesto is milder and has softer flavour that can be more suitable for kids or people or don't like the strong taste of a traditional full basil pesto. This mild pesto is great for serving with pasta, as a side to fish, or even on some crusty bread.

How to make:

  • Finely chop 3 cloves of garlic and gently fry with a teaspoon of olive oil.
  • Dry pan fry a 1/4 cup of pine nuts until golden.

Combine the garlic and pine nuts with the following in a food processor or use a Bamix:

  • 4 Tablespoons of olive oil.
  • 1/4 cup of compacted basil leaves.
  • 1.5 cups of compacted baby spinach leaves.
  • 1/4 cup of finely grated Parmesan cheese.
  • Salt and pepper to taste.

Store in a container in the fridge for up to 4 days.
